Everyone has heard that eggs are great for breakfast. However, if you are vegan or vegetarian, moonglet can be your protein-rich alternative for omelette. Here's how to make it:

200 gms moong dhuli dal, water, salt, 4 green chillies, baking soda, 1/2 tsp oil, 1 large onion, 1 tomato, 1 capsicum, 2 tbsp coriander.

Soak moong dhuli daal in water for 30 minutes. Once done, drain out excess water and grind dal with 150 ml water, salt and 1 green chilli.

Heat 1/2 tsp oil in a pan. Pour the batter and spread it evenly. Make sure the spread has thickness.

Once the bubbles start appearing on the top, add chopped onions, tomatoes, chillies, capsicum and fresh coriander.

Press the toppings gently on the batter. Flip and cook evenly from both sides.

Your delicious and healthy moonglet is ready. You can cut it into pizza-like slices. Serve hot with green chutney.
