Paneer tikka is a party starter that always wins hearts. This time, we're giving it a twist with Multani paneer tikka-thin paneer slices stuffed with a mushroom filling & cooked to perfection.

500 gm paneer, 4 tbsp grated cheddar cheese, 2 cups mushrooms, chopped, 1 cup spring onions, 2 green chillies, chopped2 tsp ginger, chopped

3 tsp coriander leaves, 1/2 tsp garam masala, 1 tsp pepper powder, 1 tsp cumin, 1/2 cup besan, Salt to taste, 1 tsp refined oil + extra for shallow frying
Slice the paneer into thin, long sheets and pat them dry to remove any excess water. Heat 1 tsp oil in a pan and sauté the spring onions and mushrooms.

Season the mix with salt, garam masala, pepper, and cumin. Cook until the mixture is completely dry, then set it aside to cool.

Once cooled, add ginger, coriander leaves, green chillies, & grated cheese to the mushroom mixture. Mix everything well. Spread this filling onto the sliced paneer.

Use a knife to evenly spread the filling on one half of each paneer slice. Fold the paneer over to seal the filling.

Make a batter using besan and water. The consistency should be just right-not too thick, not too runny.

Dip the folded paneer slices into the batter and shallow fry them in a nonstick pan until golden brown. Serve hot with a side of mint chutney.
