A quick, flavourful rice dish inspired by Mumbai's lively street food, packed with vegetables and bold spices. Perfect for a tasty meal in minutes.

2 cups cooked rice (preferably cooled)
2 tbsp butter
1 tbsp oil
1 onion (chopped)
1 tomato (chopped)
1/2 cup mixed vegetables (carrot, peas, capsicum)
1 tbsp ginger‑garlic paste
2 green chillies (chopped)
1 tsp pav bhaji masala
1/2 tsp turmeric powder
1/2 tsp red chilli powder
Salt to taste
Fresh coriander leaves (chopped)
1 tbsp lemon juice

Heat butter and oil together in a pan on medium flame until the butter melts completely.

Add chopped onions and sauté until they turn soft and light golden in colour.

Mix in ginger‑garlic paste and green chillies, cooking for a minute until aromatic.

Add tomatoes, turmeric, red chilli powder, salt, and pav bhaji masala. Cook until the mixture becomes soft and slightly mushy.

Toss in the mixed vegetables and cook for 3–4 minutes until they are tender but still slightly crunchy.

Add the cooked rice and gently mix everything together. Finish with lemon juice and fresh coriander, then serve hot.
