Craving creamy, comforting pasta without dealing with too many dishes? This quick one‑pot white sauce pasta is rich, flavourful, and ready in just 20 minutes-perfect for busy days or relaxed evenings.

2 cups pasta (penne or fusilli works best)
2 tablespoons butter
4 cloves garlic (finely chopped)
1 small onion (finely chopped)
1 cup mixed vegetables (capsicum, sweet corn, carrots, or broccoli)
2 cups milk (room temperature)
1 cup water1 teaspoon dried oregano
½ teaspoon chilli flakes (optional)
Salt to taste
½ teaspoon black pepper
½ cup grated cheese (mozzarella or processed cheese)

Heat a deep pan or pot on medium. Add butter and let it melt. Add garlic and onion, then sauté for 1–2 minutes until soft and fragrant.

Add the mixed vegetables and cook for 2–3 minutes. Stir so they cook evenly but stay slightly crunchy.

Add the raw pasta to the pot. Pour in milk and water. Ensure the pasta is mostly covered.

Add salt, black pepper, oregano, and chilli flakes. Mix well. Cover and cook on medium‑low heat for 8–10 minutes, stirring occasionally to prevent sticking.

As the pasta cooks, the milk will thicken into a creamy sauce. When the pasta softens and the sauce thickens, add cheese and mix well.

Turn off the heat and rest for 2 minutes. The sauce will thicken slightly more. Serve hot with extra cheese or herbs if you like.
