Palak Corn is a healthy dish that combines the goodness of spinach and sweet corn. Here's how you can make this delicious meal.

2 cups spinach
1 medium-sized onion
2 cloves garlic
1 cup corn
1 tsp cumin powder

Blanch fresh spinach leaves in boiling water for 2 minutes. Quickly transfer them to cold water. Drain and blend them into a smooth puree.

Heat oil in a pan and add finely chopped onions and minced garlic. Saute them until the onions become soft and fragrant.

Toss in the sweet corn and mix it with the onions. Cook for 3-4 minutes until the corn is nice and tender.

Pour in the spinach puree and season with salt and any extra spices you love. Stir it all together and cook until it's heated through.
