Samosa is a classic snack, and there are many delicious variations of it. Matar samosa is a popular version, often enjoyed during teatime or parties.

In this mini samosa, the usual aloo filling is replaced with green peas (matar) cooked in aromatic spices. These crispy, bite-sized samosas pair wonderfully with green chutney.

1 cup all-purpose flour
1 tsp salt
1 tbsp ghee
1½ cups fresh green peas
1 tsp red chilli powder
1 tsp coriander powder
1 tsp garam masala
1 tsp amchur (dry mango) powder

In a mixing bowl, combine the all-purpose flour, salt, ghee, and water. Knead into a firm dough and let it rest for 10 minutes.

Meanwhile, prepare the stuffing. Heat oil in a pan, add cumin seeds, slit green chilli, and fresh peas. Mix well.

Add red chilli powder, coriander powder, amchur powder, garam masala, and salt. Stir & cook for a few mins until the peas are well-coated & cooked. Let the mixture cool.

Divide the dough into small portions. Roll out each one, shape into mini samosas, fill with the cooled matar stuffing, and seal the edges properly.

Heat oil in a deep pan. Gently drop in the mini samosas and deep-fry on medium heat until golden and crisp. Remove and drain on kitchen paper. Serve hot with green chutney.
