Puri is a crispy, deep-fried Indian flatbread that pairs with potato curry and pickle. Want those perfect, golden, and puffed-up puris? Follow these steps to make them at home.

250 g whole wheat flour
75 g semolina
30 ml oil,
Salt to taste

In a mixing bowl, combine whole wheat flour, semolina, salt, and oil. Knead it into a stiff dough, ensuring it is firm but pliable.

Cover the dough and let it rest for 30 minutes. This helps in making the puris soft yet crisp.

Divide the dough into small portions, about 25 g each. Roll them into smooth balls, then flatten them into thin circles using a rolling pin.

In a deep pan, heat the oil on medium-high. To check if the oil is hot enough, drop a tiny piece of dough in-it should sizzle and rise to the top instantly.

Slide a puri into the hot oil. Gently press it with a slotted spoon while pouring hot oil over it to help it puff up. Flip and fry until golden.

Drain excess oil and serve immediately with a side of spicy potato curry, chana masala, or a tangy pickle for the ultimate meal.
