Chole Bhature is a quintessential North Indian breakfast. Instead of eating it from outside, try making soft bhature and spicy chhole at home for a yummy lunch. Here is the recipe:

In a pan add oil, bay leaf, cinnamon, cumin seeds, cloves, whole peppercorns, green and black cardamom. After it browns, add onions and saute.

Next, add ginger, garlic, turmeric, chilli powder, coriander powder, cumin powder, asafoetida and salt. Fry the ingredients together.

For de-glazing the pan, add a little water. Now, add the chole (soaked overnight and pressure-cooked) to the masala.

After stirring well, add tomatoes, a little sugar and salt. Now, add ajwain, chopped green chillies and water.

To get the dark colour, add a tea bag to the masala. Simmer the chole gently for an hour and cover it. Add lime juice and a dollop of butter.

Garnish the chole with coriander and butter and serve them hot with bhature.

Knead the whole wheat flour, maida and salt together with an adequate amount of water. Sprinkle the yeast on top. Leave it for 2-3 hours.

Divide the dough into small to medium-sized balls. Roll out in an oval or round shape. Deep fry till golden brown. Serve and enjoy!
