Nobody enjoys sweating it out in the kitchen during summer. Make this quick veg fried rice for anytime. You need a few simple ingredients to whip up a bowl of veg fried rice.

2 Tbsp oil
2 tsp ginger-garlic paste
1/2 cup spring onion, chopped
1/2 cup carrot, chopped
1/2 cup cabbage, chopped
1 capsicum, chopped
1 tsp salt
1 tbsp soy sauce
1 tbsp vinegar
1 cup rice

Heat oil in a pan. Add ginger-garlic paste and sauté it for a few seconds until the raw smell goes away.

Add spring onion, carrot, cabbage, and capsicum. Cook everything on a medium flame until the veggies turn soft.

Now put in salt, soy sauce, and vinegar. Mix it all so the vegetables soak in the flavours.

Give it a good stir on low heat and then toss in the cooked rice. Mix everything well.

Serve your vegetable fried rice hot in a bowl. Sprinkle fresh coriander on top for that final touch.
