Craving a hot bowl of soup? Then this simple Railway-style tomato soup recipe will take you back in time to Shatabdi Express with its tangy flavour. Here's how to make it.

2 medium tomatoes
1 small onion
2-3 cloves of garlic
1 small green chilli
1-inch ginger piece
¾ tsp oil
500 ml water
1 tbsp coriander stems
¼ tsp black pepper powder

¾ tsp Kashmiri red chilli powder
¼ tsp haldi
½ tsp coriander powder
½ tsp sugar
1/3 tsp salt
½ tsp corn flour slurry

Chop the tomatoes, onion, garlic, green chilli and ginger. In a pan, heat oil. Once hot enough, add ingredients except tomato and saute until aromatic.

Once done, add chopped tomatoes and coriander stems to the pan. Cook for 4-5 minutes until the tomatoes become mushy and soft.

Add water and spices – salt, haldi, Kashmiri red chilli powder, and coriander powder. Let the soup simmer for 10-12 minutes and become aromatic.

Blend the cooked mixture in a mixer. Then transfer the blended soup to the pan. Add corn flour slurry, black pepper and sugar. Cook for 2-3 minutes until thick.

Adjust the seasoning as per your taste. Serve hot in bowls or cups, top it up with butter and crispy croutons and enjoy this delicious soup!
