A light, pure, and comforting dish, Satvik Paneer Bhurji is ideal for fasting days when you want something nourishing yet simple. Prepared without onion and garlic, it is quick to cook and easy on the stomach.
200 grams paneer (crumbled), 1–2 green chillies (finely chopped), 1 teaspoon grated ginger, 2 medium tomatoes (finely chopped), ½ teaspoon rock salt (sendha namak) or as per taste, ¼ teaspoon black pepper, ½ teaspoon cumin seeds, 1 tablespoon ghee, 2 tablespoons fresh coriander leaves (chopped).

Heat 1 tablespoon ghee in a pan and add cumin seeds, allowing them to crackle gently and release their aroma.

Add grated ginger and chopped green chillies, sauté briefly until fragrant but not browned.

Add finely chopped tomatoes and cook until they soften and turn slightly mushy.

Add crumbled paneer and stir gently so it mixes well with the cooked base.

Sprinkle rock salt and black pepper, then cook for a minute while mixing evenly.
