In a heavy-based pan, heat oil and add asafoetida, coriander seeds, fenugreek seeds, mustard seeds, cumin seeds, and curry leaves.

Fry until the seeds splutter, then add ginger and saute over high heat to a light brown colour.

Mix in the gram flour and saute until the mixture begins to clump. Add salt, turmeric, green chillies, and chilli powder, then mix well.

Gradually add water, stirring continuously so that no lumps form. Bring to a boil.

Add tomatoes and blend well. Now add tamarind, jaggery, green beans, drumsticks, cauliflower, lotus stem, potatoes, and okra.

Simmer until the vegetables are cooked through. Garnish with coriander leaves and serve with white rice.
