Crispy outside and soft within, onion masala dosa is a traditional South Indian breakfast loved for its taste and aroma. Here's a simple way to prepare it at home.

Dosa batter
1 medium onion (finely chopped)
1–2 green chillies (chopped)
1 boiled potato (optional, mashed)
1 tbsp oil or ghee
½ tsp mustard seeds
A few curry leaves
Salt to taste

Heat a flat pan or tawa and lightly grease it with a few drops of oil. Spread a ladle of dosa batter into a thin circular layer.

Let the dosa cook on medium heat until the edges begin turning crisp. Drizzle a little oil or ghee around the sides.

In another pan, heat oil and add mustard seeds and curry leaves. Once they splutter, add chopped onions and green chillies.

Sauté the onions until they turn soft and slightly golden. Mix in the mashed potato and a little salt to make a simple masala filling.

Spread this onion masala mixture onto the centre of the cooking dosa. Sprinkle some fresh coriander for added flavour.

Fold the dosa gently and cook for another half‑minute until crisp. Serve hot with coconut chutney and sambar for the best taste.
