Dhokla is a classic Gujarati snack that can be made using various ingredients. Suji dhokla is a popular variation-light, fluffy, and perfect for healthy snacking.

1 cup suji (semolina)
½ tsp sugar
½ tsp ginger paste
½ tsp green chilli paste
1 tsp salt
1 tbsp oil
½ cup sour curd
½ cup water
1 tsp fruit salt or baking soda

½ tsp rai (mustard seeds)
4–5 curry leaves
2–3 green chillies (slit)
1 tbsp oil
Fresh coriander, chopped
Grated coconut (optional)

In a mixing bowl, combine the suji, ginger paste, green chilli paste, salt, sugar, and oil. Add the curd and mix well.

Beat the mixture until smooth. Add water and mix again to form a batter.

Add the fruit salt or baking soda, stir gently, and immediately pour the batter into a greased tin. Place the tin in a steamer.

Steam for 20 minutes. Once done, remove the tin from the steamer and set it aside to cool slightly.

To prepare the tadka, heat oil in a small pan. Add rai, curry leaves, and slit green chillies.

Sauté until the chillies are slightly coloured, then add ¼ cup water and bring it to a quick boil.

Cut the dhokla into pieces of your desired size. Pour the tadka evenly over the pieces. Garnish with chopped coriander and grated coconut. Serve warm.
