Upma is a beloved breakfast dish and there are many variations you can try. Here's a healthier version of vermicelli upma that's easy to whip up and great start to your day.

2 cups thin vermicelli, 2 tbsp refined oil, 1 tsp mustard seeds, 1 tsp cumin seeds, 1 tbsp urad dal, 2 green chillies (split lengthwise), 9-10 curry leaves

1 onion, 1/2 cup beans, 1/2 cup carrots, chopped, 1/2 cup fresh peas, 1/2 cup tomato puree, 1/2 tsp turmeric, Salt to taste, 2 tbsp roasted peanuts

Heat a wok and dry roast the vermicelli for 3-4 minutes until it turns a light golden colour. Set it aside on a plate.

Heat the oil and toss in the urad dal, mustard, cumin seeds. Let them crackle, add the green chillies & curry leaves. Stir it for 1-2 mins before adding the onions.

Add turmeric powder and salt, and cook for another 1-2 minutes. Now, add the chopped vegetables and stir it. Let the veggies cook for about 3-4 minutes.

Pour in the tomato puree along with 2 1/2 cups of water. Bring it all to a boil.

Add the roasted vermicelli to the boiling water. Mix well, cover the wok, and cook for 5-6 minutes until the vermicelli is soft and the water has been absorbed.

Check the salt, transfer the upma to a serving bowl, and top it with roasted peanuts and a green chilli for that extra zing. Serve immediately!
