Kachori is a classic Rajasthani snack that is loved all over India. One of the most popular versions is the Jodhpuri-style aloo pyaaz kachori, and it is seriously hard to resist.

This Jodhpuri-style kachori is crispy and packed with flavour. It tastes even better when served with fried green chillies and a spicy green chutney.

1.5 cup Maida
3 tbsp Oil
to taste Salt
1 tsp Coriander seeds
1 tsp Cumin seeds
1 tsp Fennel seeds
1 Garlic clove
2 Green chillies, finely chopped
3 tbsp Besan

1 Small onion, finely chopped
1/2 Onion, sliced
A pinch of Hing
1 Large potato, boiled
1/2 tsp Sugar
Oil, for frying
1 tsp Chaat masala
1/2 tsp Red chilli powder

Start by mixing flour, salt and oil in a bowl. Pour in some water & knead until you get a smooth dough. Cover it with a damp cloth & let it rest for 30 mins.

Take a mortar and pestle and crush cumin seeds, coriander seeds and fennel seeds into a coarse powder. Keep this spice mix aside.

Heat some oil in a pan on a low-medium flame. Add the crushed spice mix and sauté it for 2-3 minutes. Add onions and garlic. Cook it turns golden brown.

Add the chickpea flour and sauté until the aroma hits you. Once it smells nutty, turn off the flame and let it sit.

Now add red chilli powder, sliced onions, boiled potatoes, chaat masala, hing, sugar and salt. Mix everything well and set it aside to cool before using.

Make small balls out of the dough and press them flat using your palms. Add a spoonful of the potato-onion filling in the centre and seal the edges carefully.

Heat oil in a deep pan and fry all the kachoris till they turn golden brown and crispy. Your Jodhpuri-style aloo pyaaz kachori is ready to serve!
