1 cup jowar (sorghum) flour
1/4 cup finely chopped fresh fenugreek (methi) leaves
2 tablespoons yoghurt
1 tablespoon sesame seeds
1 teaspoon grated ginger
1/2 teaspoon turmeric powder
1/2 teaspoon red chilli powder (adjust to taste)
Salt as required
Water, as needed to knead the dough
Oil for cooking

In a mixing bowl, blend jowar flour, fresh methi leaves, sesame seeds, ginger, spices, and salt.

Add yogurt and slowly blend in water to create a soft, tender dough. Rest it for 10 minutes.

Split the dough into tiny portions and shape each into a thin, round thepla with dry flour when required.

Warm a pan over medium heat and set the rolled thepla onto it.

Cook until bubbles surface, flip, and brush a few drops of oil on both sides. Cook until golden marks show, and the thepla is fully cooked.
