Easy Puran Poli Recipe For Makar Sankranti 2025

Makar Sankranti 2025 will be celebrated on January 14 this year. Puran Poli is one of the most popular sweets made during this festival. Here's an easy recipe for it:

Ingredients For Dough

1 cup Maida
1 cup Atta (whole wheat flour)
1 tsp Salt
2 tbsp Ghee
1 cup Water
¼ tsp turmeric powder (optional)

Ingredients For Filling

1 cup Chana Dal (washed)
2 cups Water
1 cup Grated Jaggery
¼ cup sugar
1-2 tbsp ghee
1/2 tsp Cardamom Powder
Pinch of Nutmeg Powder

Step 1

Soak the chana dal overnight or for at least 6 hours. Later, transfer the dal to a pressure cooker, add water and pressure cook it for 3-4 whistles.

Drain the water and mash/blend to form a coarse paste. Add 1-2 tbsp ghee to a heavy-bottomed pan/kadhai and then add the mashed dal to it.

Add the jaggery and sugar. Stir to melt them and combine thoroughly while cooking on low flame.

Once the mixture thickens, add the cardamom and nutmeg powder. Mix well and turn off the heat. Allow this puran (filling mixture) to cool completely.

To prepare the dough, combine whole wheat flour, all-purpose flour (maida), salt and ghee. Mix well to get a crumbly texture.

Gradually add water and knead into a soft, pliable dough. Cover with a damp cloth and let it rest for 30 minutes.

Later, make flat balls out of the dough like it's done for chapatis. Dust with maida and roll out into a small circle. Place a portion of the filling in the centre.

Fold the edges of the dough over the filling and seal it. Don't add too much stuffing. Gently roll it out again into a thin, even circle. Be careful not to tear it.

Cook the puran poli on a hot tawa on medium heat. Cook for 1-2 minutes on each side, applying ghee as needed, until golden brown spots appear.

Serve the puran polis while warm with a topping of ghee. You can enjoy them plain or pair them with milk, amti, or pickle.
