Punjabi cuisine is celebrated for its rich flavours, and Amritsari Sookhi Dal is a standout dish that's both simple and delicious. Follow these steps to make it at home!

1 cup urad dal, 1 onion, finely chopped, 2 tomatoes, chopped, 2 green chillies, finely chopped, 1 tsp cumin seeds, 1/2 tsp turmeric powder

1/2 tsp red chilli powder, 1 tsp garam masala, Salt to taste, 2 tbsp oil or ghee, Fresh coriander leaves for garnish, 1 tsp lemon juice

Rinse the lentils thoroughly. Pressure cook with three cups of water until soft and mushy. Heat oil or ghee in a separate pan over medium heat.

Add cumin seeds and let them splutter. Then, add chopped onions and green chillies. Sauté until the onions turn golden brown.

Stir in turmeric powder, red chilli powder, and garam masala. Cook for a minute to let the spices release their flavours.

Add chopped tomatoes and cook until soft, allowing the oil to separate. Drain the cooked dal and mix it into the pan.

Let the dal simmer on low heat for 5 minutes, allowing the flavours to meld. Add salt to taste.

Garnish with fresh coriander leaves and lemon juice. Your Amritsari Sookhi Dal is ready to serve!
