Kadhi is a popular dish with many regional variations. If you enjoy diverse recipes, you must try Maharashtrian Kadhi – it's a delicious take on this classic.

2 tsp Cumin seeds
6-7 Garlic cloves
2 tsp Ginger
2 Green chillies
1 cup Plain Dahi
1/2 cup Besan (gram flour)
1 tsp Turmeric
2 tsp Salt
1 cup Water
1 tsp Methi (fenugreek seeds)
2 Red chillies (whole, dried)
10 Curry leaves
1/2 tsp Asafoetida (Hing)

Combine cumin seeds, garlic cloves, ginger, and green chillies. Blend them into a coarse paste.

In a bowl, whisk the dahi until smooth. Add the besan, turmeric, and salt to the whisked dahi.

Whisk everything together thoroughly. Gradually add water, mixing well until you have a smooth, lump-free batter.

In a heavy-bottomed pan, add methi, red chillies, curry leaves, and asafoetida.

Sauté these ingredients lightly, then add the blended ginger-garlic paste. Mix well.

Pour the dahi-besan mixture into the pan. Stir continuously and bring the kadhi to a gentle simmer.
