If you're a fan of South Indian food, you need to try this delicious Udupi-style vegetable pulao! Packed with flavours from a special paste and veggies, Here's how to whip it up:

1 cup freshly grated coconut, 3-4 garlic cloves, ginger, 2 green chillies, 2 tbsp coriander seeds, 2-3 dried red chillies, 1 cinnamon, 3 cardamom

1 cup rice, cashews, onion, 1 tomato, potato, carrot, diced, 1 cinnamon, bay leaf, peas, cauliflower, oil, ghee, 1/2 cup coconut milk, Salt

Start by soaking the rice in water for about 20 minutes. While that's happening, heat up a pressure cooker and melt the ghee.

Toss in the bay leaf, cinnamon stick, cardamom, and cloves, and let them sizzle for a bit.

Add the cashews and roast them in the ghee. Stir in the onion, tomato, and a tablespoon of spice paste. Mix it all together nicely.

it's time to add the chopped veggies, coconut milk, and salt to the mix. Give everything a good stir, then fold in the soaked rice gently.

Seal the lid and cook it under pressure for about 15 minutes—aim for 3-4 whistles to get that perfect fluff!

Once it's cooked, fluff it up with a fork, garnish with fresh coriander leaves, and serve it up hot.
