Ingredients For Masala Macaroni

1 cup macaroni
3 tbsp oil
1/2 tsp cumin seeds
4 garlic cloves, finely chopped
2-3 green chillies, finely chopped
1 onion, chopped
1 tomato, chopped
1/4 cup carrots (optional), chopped
1/2 cup capsicum (optional), chopped
1/4 cup green peas (optional)

1/4 tsp turmeric
1/2 tsp chilli powder
1/4 tsp garam masala
Salt and pepper to taste
2 tbsp tomato or chilli sauce (optional)
1 tsp lemon juice
Coriander leaves for garnish

1. Boil The Macaroni

Cook the macaroni until al dente. Drain the water but keep aside one cup for later. Drizzle a little oil on the pasta and set aside.

2. Saute Garlic, Onion And Chillies

In a pan, heat oil and add cumin seeds, garlic and green chillies. Add the chopped onions and stir-fry until they turn translucent.

3. Add Tomatoes And Veggies

Add the chopped tomatoes and other vegetables of your choice. Stir well and cook on medium heat for a few minutes.

4. Add Spices For Flavour

Lower the heat and add turmeric, chilli powder, garam masala, salt and pepper. Mix the spices evenly with the vegetables.

5. Cook Veggies With Spices

Saute the mixture until the vegetables are cooked. Adjust the seasoning. Add tomato sauce or chilli sauce if you prefer a tangy taste.

6. Mix Pasta With Masala

Add the boiled macaroni to the spiced vegetables. Pour in a little of the reserved pasta water and stir until everything is combined well.

7. Garnish And Serve Hot
