Masala macaroni is a flavourful Indian-style snack that combines pasta with spices and vegetables. It is simple to cook, tasty, and perfect for a quick meal at home.

1 cup macaroni
3 tbsp oil
1/2 tsp cumin seeds
4 garlic cloves, finely chopped
2-3 green chillies, finely chopped
1 onion, chopped
1 tomato, chopped
1/4 cup carrots (optional), chopped
1/2 cup capsicum (optional), chopped
1/4 cup green peas (optional)

1/4 tsp turmeric
1/2 tsp chilli powder
1/4 tsp garam masala
Salt and pepper to taste
2 tbsp tomato or chilli sauce (optional)
1 tsp lemon juice
Coriander leaves for garnish

Cook the macaroni until al dente. Drain the water but keep aside one cup for later. Drizzle a little oil on the pasta and set aside.

In a pan, heat oil and add cumin seeds, garlic and green chillies. Add the chopped onions and stir-fry until they turn translucent.

Add the chopped tomatoes and other vegetables of your choice. Stir well and cook on medium heat for a few minutes.

Lower the heat and add turmeric, chilli powder, garam masala, salt and pepper. Mix the spices evenly with the vegetables.

Saute the mixture until the vegetables are cooked. Adjust the seasoning. Add tomato sauce or chilli sauce if you prefer a tangy taste.

Add the boiled macaroni to the spiced vegetables. Pour in a little of the reserved pasta water and stir until everything is combined well.

Cover the pan and cook for two minutes. Add lemon juice and chopped coriander before serving. Enjoy your hot masala macaroni.
