Anda Bhurji is a classic recipe, and it's time to make it extra flavourful with fresh methi leaves. This methi anda bhurji tastes delicious and is perfect for breakfast.
250 Gram Methi
2 Onions, chopped
2 Tomatoes, chopped
1-2 Green Chillies
1 tbsp Garlic (grated)
1 tsp Ginger (grated)
1 tsp Cumin Seeds
A pinch of hing
1 tsp Coriander Seeds
1/2 tsp Turmeric
1 tsp Garam masala powder
Salt to taste
Red chilli powder to taste
Coriander leaves for garnishing
5 Eggs
Heat ghee or oil in a pan. Sauté the cumin seeds until they change colour.

Sauté the onions, green chillies and garlic.

Sauté the tomatoes and garlic with salt, red chilli powder, coriander seeds and turmeric powder.

Add the methi leaves and cook until they wilt. Break the eggs over the mixture and whisk until they cook.
