How To Make Cucumber Pachadi For Onam

INGREDIENTS

1 cucumber, finely chopped
1/2 cup grated fresh coconut
1/2 tsp cumin seeds
1-2 green chillies, chopped
1 cup curd

1 tsp salt, or to taste
2 tbsp coconut oil
1 tsp mustard seeds
2 dried red chillies, broken
2 sprigs curry leaves

STEP 1

Cook the chopped cucumber with 1 cup of water, 1/2 tsp salt and green chillies on a low flame. Cover and cook until it softens.

Grind the grated coconut, cumin seeds, 1/2 tsp mustard seeds, and a little water to form a thick paste.

STEP 3

Once the cucumber is cooked, add the coconut paste to the pan. Stir and cook for 2 minutes. Allow it to cool.

Later, stir in whipped curds along with 1/2 tsp salt. Combine the curds well with the cucumber-coconut mixture.

STEP 5

Prepare a tempering with coconut oil, mustard seeds, red chillies and curry leaves. Pour it over the curd mixture. Cover it for 2 minutes before serving the pachadi.
