Add extra flavour by tossing the paneer pieces with chaat masala or in a mix garam masala and chilli powder. Alternatively, use some green chutney for a unique taste.

Add little oil to the batter while mixing. It will make it smoother and less sticky, improving the overall texture of the pakora. For 2 cups of besan, add around 1 tbsp oil.

Allowing the batter to rest is very important. After mixing it well, cover and keep it aside for 15-20 minutes while you prep the other ingredients.

Pop the paneer pieces in the hot oil at the right time. If the oil is too hot, they will burn. If it has not heated enough, you may end up with greasy pakoras.
