How To Make Akuri (Parsi-Style Scrambled Eggs)

Akuri is a Parsi scrambled egg dish that you can easily make at home. It has an irresistible flavour derived from spices and a distinctively soft, runny texture.

INGREDIENTS

4 eggs
1/4 tsp cumin seeds
1/4 tsp asafoetida
1 onion, finely chopped
1 tomato, finely chopped
2 tbsp coriander leaves, finely chopped
2 green chillies, finely chopped

4 garlic cloves, finely chopped
1/2 tsp turmeric powder
1/2 tsp chilli powder
2 tbsp oil
1 tbsp butter
2 tbsp milk
1 tsp salt, or to taste
1/2 tsp black pepper powder

STEP 1

Whisk the eggs well with the milk and pepper. Keep aside.

Heat the oil in a non-stick pan on medium heat. Add cumin seeds and asafoetida. Then add the garlic and onion. Saute until the onions begin to change colour.

Next, add the chopped green chillies, tomato and 1 tbsp coriander leaves. Mix for a minute before adding the turmeric powder, chilli powder, and salt.

STEP 4

Lower the heat and pour the whisked egg mixture into the pan. Toss and add butter. Cook for 2 minutes – combine the ingredients well, but keep the eggs runny.

Garnish the eggs with the remaining coriander leaves. Serve the akuri hot with buttered pav, toasted bread slices or even rotis.
