Lagan Nu Custard is a classic Parsi dessert perfect for festive occasions. The “Lagan” in its name refers to a wedding.

1 litre milk
4 eggs
1 cup sugar
1/2 tsp cardamom powder
1/4 tsp nutmeg powder
1 tsp vanilla essence
1 cup cream
½ cup mixed dry fruits (almond, pistachios, charoli, raisins

Heat the milk in a heavy-bottomed pan and bring to a boil. Simmer it for 15 minutes, stirring continuously until it reduces to 3/4th of its quantity.

Add sugar and stir to dissolve it into the thickened milk. Next, mix in the cardamom powder and nutmeg powder. Set aside to cool.

In a large bowl, whisk the eggs thoroughly with vanilla essence. Then add the cream, salt and half of the dry fruits mix. Whisk again.

Slowly pour the warm (not hot) milk into the whisked egg mixture. Whisk continuously to avoid scrambling the eggs.

Preheat the oven to 160-180 degrees C. Transfer the custard mixture to a greased deep baking dish. Bake for around 30 minutes.

Insert a skewer to check if it comes out clean. If yes, the custard is set and should be cooled/chilled before serving. Garnish it with the remaining dry fruits.
