Tired of regular omelettes? Try making Eggs Florentine at home! This is a delicious twist on Eggs Benedict and is healthy and delicious. Here's how to make it at home!

For the base:
2 eggs
1 English muffin
1 cup fresh spinach
1 tbsp butterSalt and pepper, to taste
A pinch of nutmeg
1 tsp vinegar

For the hollandaise sauce:
2 egg yolks
1/3 tbsp lemon juice
4 tbsp melted butter
A pinch of salt
A pinch of cayenne pepper

In a pan, melt the butter and add fresh spinach. Cook until wilted, then season with salt, pepper, and nutmeg for extra flavour. Set aside.

Bring water to a simmer, add some vinegar and gently crack open the eggs. Poach for 3-4 minutes until the whites are set but the yolks are runny.

Blend the egg yolks, lemon juice, and melted butter until the mixture becomes creamy. Add salt and cayenne pepper for a smooth, rich flavour.

Slice the English muffin in half and toast until golden brown. A crispy base adds texture and enhances the overall taste.

Place the sauteed spinach on each muffin half, followed by a poached egg. Drizzle with hollandaise sauce and garnish with fresh greens. Serve immediately.
