Quinoa is a nutritional powerhouse, loaded with protein, fibre, magnesium, and antioxidants. Transform this super grain into a quick and nourishing upma for your breakfast with this recipe:

1 cup quinoa, 1 onion, 8 cashews, 1 cup veggies, 2 green chillies, 1/2 inch ginger, 1 tsp garlic, 1 tsp mustard seeds, 7 curry leaves, 1 tsp urad dal and chana dal each, 1/2 tsp jeera powder, salt, 1/2 tbsp lemon juice.

Place the quinoa in a colander and rinse it under running water.

Heat ghee in a pan. Add mustard seeds, urad dal, chana dal, and cashews. Saute until they turn brown.

Add ginger and curry leaves, and saute for a minute. Then add onions, ginger and green chillies, and saute until the onions turn brown.

Add chopped vegetables of your choice, salt, and jeera powder. Saute the vegetables until cooked.

Add quinoa and water (2 cups of water for 1 cup of quinoa). Cover the pan with a lid and let the quinoa cook.

Once the quinoa is cooked, add lemon juice and mix well before serving.
