For this recipe, it is advisable to use a thinner type of samosa patti (flour sheet/covering) since the poha stuffing is not as heavy as potato and other fillings.

There are several versions of poha samosa (also known as poha patti samosa). Here's one quick, delicious and easy way of making this snack at home:

1 cup poha
2 onions, sliced
1 tsp chopped ginger
1 tsp each: red chilli powder, chaat masala & garam masala
Pinch of turmeric powder (optional)

1 tbsp chopped coriander leaves
4-5 green chillies
2 tbsp maida
Oil for deep frying
Salt to taste
Pinch of sugar

Cook 1 cup of plain poha. You can flavour it with a bit of turmeric, but this is optional. Later, allow the poha to cool and then transfer it to a large mixing bowl.

To the same bowl, add chopped onions, chilli powder, garam masala, chaat masala and salt. Mix the ingredients by hand or with a large spoon.

Add the chopped ginger, coriander leaves and green chillies. Add a pinch of sugar to balance the flavours and mix thoroughly. This filling mixture needs to be dry.

Halve each samosa patti. Fold one to make a hollow cone. Seal the edge with a simple paste made by combining maida and water.

Fill the cone-like shape with the poha stuffing prepared earlier. Carefully fold the top edge and seal it with the paste. Repeat the process for all pattis.

Deep fry/Air fry them until they turn crisp and golden brown. Serve the poha samosas with lehsun (dry garlic) chutney, pudina (mint) chutney and/or ketchup.
