South Indian Onion-Peanut Chutney Recipe

Ingredients:

2 onions
Half a cup of peanuts
2 cloves of garlic
Half-inch ginger
2 green chillies
Salt, to taste

For Tempering:

1 teaspoon urad dal
4-5 curry leaves
Half a teaspoon of mustard seeds
1 whole dry red chill
i1 tablespoon oil

Roast The Peanuts First

Dry roast the peanuts till golden, peel off the skin and set aside.

Chop And Cook The Onions

Finely chop the onions and sauté in a bit of oil.

Cook The Onions Just Right

Let the onions cook until they turn soft and translucent. Turn off the heat and allow to cool.

Time To Blend It All

In a blender, add the roasted peanuts, cooked onions, green chillies, ginger, garlic and salt. Blend it into a smooth chutney.

Want It Tangy?

If you prefer a bit of tang, feel free to mix in a little tamarind pulp. Pour the chutney into a bowl and set it aside.

Do The Tempering Magic

Heat some oil in a pan. Add urad dal, curry leaves, mustard seeds and red chilli. Let everything sizzle and pour this tempering over the chutney before serving.
