Keema Pav is a street food classic in Maharashtra. Juicy, spiced minced mutton stuffed into soft pav makes it a must-try dish. If you have not had it yet, you are seriously missing out.

Heat oil in a pan & toss in a bay leaf, green cardamom & cumin seeds. Add chopped onions and sauté until golden brown & stir in garlic, ginger, & butter for extra flavour.

Throw in chopped green chillies and capsicum. Sauté for about 3-4 minutes until the capsicum softens a bit. De-glaze the pan with a splash of water to lift up all those tasty bits.

Mix in turmeric powder, red chilli powder, cumin powder, coriander powder, asafoetida, and salt. Stir well to coat everything with the spices.

Add the minced mutton and cook for 3-4 mins. Pour in the milk and mix well. Add tomato purée, sugar, and lemon juice. Let it simmer for 10 mins on medium heat.

Add a cup of water, cover the pan, and cook until the water evaporates, and the mutton is tender and flavourful.

Garnish with chopped coriander, split green chillies, and a generous dollop of butter. Serve hot with soft pav for the full experience.
