Heat oil in a pan and add red bell peppers and mustard seeds. Once the seeds start to splutter, add suji and saute for about a minute.

Remove the pan from the heat and let it cool. Once done, add yoghurt, salt, and suji to form a smooth batter. Mix well.

Keep the batter aside in a warm place for about an hour or so.

Next, add fruit salt and steam in an idli steamer for 7-8 minutes, or until the idlis become soft in texture.

Serve hot and enjoy with piping hot sambar and coconut chutney.
