Bathua is a versatile vegetable that can be included in your winter diet in many ways, such as in roti, paratha, saag, and raita. Here, we bring you a delicious bathua raita recipe that is also great for your weight-loss diet.

300 grams bathua, 500 grams curd, A pinch of white salt, Black salt to taste, 1 teaspoon cumin, A pinch of asafoetida, 2 teaspoons oil, 5-6 garlic cloves, 3-4 green chilies

First, clean the bathua, wash it with water, and cook it in a pressure cooker with the whistle on.

Once the bathua has softened, remove it and place it in a sieve. Next, put the boiled bathua in a mixer jar, add some green chillies and garlic cloves, and grind it into a smooth paste.

Whip the curd in a bowl, add some white salt and black salt, and mix it well. Then, add the prepared bathua paste to the curd mixture and stir well.

Heat some oil in a pan over medium heat. Add the crushed garlic and sauté until it turns slightly brown.

Add the asafoetida and cumin seeds to the pan and let them crackle for a while. Pour the prepared seasoning over the raita and cover it. Let it sit for a few minutes, then remove the lid and enjoy your bathua raita!
