Mix a little semolina into your all-purpose flour for that extra crunch. When kneading, use cold water and make sure the dough is soft but firm - that's the secret!

When making the onion filling, saute the onions really well, & don't skimp on the spices. Let the mixture cool completely before you start stuffing - no one wants a soggy kachori.

Put a good amount of the onion filling in the centre of the dough, then bring the edges together and seal tightly. This will stop any filling from leaking and help the kachoris puff up perfectly.

Always fry your kachoris on medium to low heat. This ensures they cook through evenly and gives them that beautiful golden-brown crust.
