Looking for a healthy and filling breakfast? Try this tomato besan omelette. It is light, egg-free, easy to make and packed with flavour without needing too many spices.

Besan is high in vegetarian protein, making it a strong substitute for eggs. Its fibre keeps you full for longer, supports gut health and may help in weight loss when eaten regularly.

1 cup besan
1 onion, finely chopped
1 tomato, grated
1 tomato, sliced round
1 tsp coriander leaves, finely chopped
2 green chillies, finely chopped
1 ½ tsp chilli powder
½ tsp ajwain
1 tbsp oil
Ghee or oil for pan frying
Salt to taste

In a large bowl, mix all ingredients except sliced tomato with around 1 cup water. Make a thick batter. Cover and let it rest for ten minutes.

Grease a pan or tawa with ghee. Spread 2 ladles of batter into a thin circle. Keep it even for best results.

Place 2-3 tomato slices on top. Spread ghee around the edges. Cover and cook on low flame for 5 minutes.
