Uttapam is a popular South Indian dish that's perfect for any time of the day. The tomato-onion uttapam is a delicious variation to start your morning. Try this quick and easy breakfast recipe. Check it out below!

350 grams rice (parboiled, 80 grams urad dal (Urad dhuli), 1/2 tsp fenugreek seeds, 2 tsp salt, 1 cup chopped onions,

1 cup chopped tomatoes, 2 tsp coriander, 2 tsp finely chopped green chillies, Oil or butter as required

Soak rice, dal, and methi (fenugreek) seeds in water for 5 hours.

In a mixer or blender, grind the soaked mixture with salt and enough water to make a dropping consistency.

Leave the mixture to ferment for 5-6 hours.

Heat the tawa (griddle) and brush some oil on it. Once hot, splash a little water and pour one cup of batter onto the tawa. Let it spread out.

Top the uttapam with chopped onions, tomatoes, green chillies, and coriander leaves. (It's a good idea to combine them all in a bowl beforehand, so you can easily sprinkle the right amount.)

When the edges start to brown a bit, drizzle some oil around the uttapam.

Flip the uttapam over, allow it to cook, and serve hot.
