It swaps ghee for olive oil and cream for milk, keeping it light yet rich in flavour. Perfect for a quick, wholesome Indian meal.

Olive oil, zeera, star anise, ginger-garlic paste, capsicum, tomato puree, paneer cubes, salt, sugar, garam masala, milk, and coriander leaves.

In a pan, heat olive oil. Add zeera, star anise and ginger-garlic paste. Sauté till fragrant and lightly golden.

Mix in diced capsicum and sauté for a minute. Cook longer if you prefer a softer texture.

Add tomato puree, salt, garam masala, and sugar. Cook till the mixture thickens and oil separates from the sides.

Reduce the heat and pour in milk. Stir gently and add paneer cubes. Simmer for two minutes without overcooking.

Finish with chopped coriander leaves. Serve the curry hot with roti, paratha, or steamed rice.

Grill paneer cubes till golden before adding them to the curry. Add a slit green chilli if you prefer extra spice.
