Nothing says cosy like a hot bowl of soup on a chilly night, and this creamy spinach soup is all about comfort with a dose of nutrition. Here's how you can make it.

2 cups spinach leaves, 1 cup water, 2 tbsp spring onion, 1 tbsp olive oil, 1/2 tsp oregano, 1 cup milk, Salt and pepper to taste, Bread croutons, cheese

First, bring the water to a boil and toss in the spinach leaves until soft.

Blend the spinach and water until smooth, then strain the puree to get that perfect texture.

In a non-stick pot, heat the olive oil, add the oregano, and throw in the spring onions. Saute for around 30 seconds.

Ladle the soup into bowls, garnish with some grated cheese, and add crunchy croutons on top. Enjoy it hot!
