Palak pooris are fluffy, vibrant green bread that screams winter. They're perfect for breakfast or an evening snack paired with a hot cup of chai. Here's how to make them at home.

3 cups chopped spinach
3 cups hot water
2 ½ cups cold water
1-inch ginger, chopped
1 green chilli, chopped
2 ½ cups whole wheat flour
½ tsp ajwain
A pinch of hing
Oil

In a pan, boil water before adding spinach to it. Blanch for 2-3 mins before adding to cold water. Blend into a smooth puree with ginger and chilli.

Take a bowl and add whole wheat flour, ajwain, and hing. Add spinach puree and knead a smooth dough. Let it rest for 10-15 minutes.

Divide the dough into small balls and roll them into small circles. Flaten using a rolling pin. Avoid using excess flour while rolling.

In a pan, heat oil. Then gently slide a poori into the oil and fry until it puffs up. Flip and fry on both sides. Place on a paper towel and serve hot!
