Chorizo Aglio Olio Recipe: Chorizo is a Goan sausage, which is spicy and tangy. A local favourite both in the North and South of Goa. Made from pork, local spices and local vinegar. It's different from Spanish Chorizo, which is smoked hence requires no cooking.

Ingredients of Chorizo Aglio Olio
- 100 gms Spaghetti pasta
- 10 gram garlic
- 50 gram Chorizo
- 3 ml olive oil (the chorizo has its own fat which will ooze out oil when boiled)
How to Make Chorizo Aglio Olio

Boil the pasta in a deep pan, simultaneously boil the chorizo in 60ml water on a slow flame.

Drain the pasta and set aside. Keep the pasta water to add to the dish when combining.

Heat a pan, add Olive oil and minced garlic. Stir for a 30seconds.
4.
Add the chorizo with the liquid it was boiled in. Add the pasta and gently combine. Add 30ml of the pasta water. Gently stir. Check for salt.
5.
Garnish with basil leave and serve
