Ingredients of Stuffed Capsicum Rings

  • 6-8 small, firm green capsicums (bell peppers)
  • Olive oil for pan-frying
  • bread crumbs
  • For the stuffing:
  • 4 boiled potatoes
  • 1/2 cup boiled corn kernels
  • 2 green chillies, finely chopped
  • 2 cheese cubes, grated
  • 1 tbsp parsley
  • 1 tbsp chilli flakes
  • 1 tbsp oregano/ mixed herbs
  • 1 tbsp cornflour
  • 2 tbsp butter
  • Salt to taste

How to Make Stuffed Capsicum Rings

Wash the capsicums, halve and deseed them. Cut them into thick rings and place these on absorbent paper to dry.

Mash the boiled potatoes and then mix them with the rest of the ingredients mentioned above for the stuffing.

Taste to adjust salt. Then start stuffing the filling inside the rings. Do so carefully while keeping the rings on a plate.

Gently press each stuffed ring into breadcrumbs on both sides. Line them all in a tray and refrigerate for 5-10 minutes.

Heat oil in a non-stick pan. On medium flame, pan-fry the rings until golden brown on both sides. Serve hot with ketchup, chilli sauce or sweet-and-sour dip.
