Karjikai is a south-Indian dessert that is made using flour dough, stuffed with a flavourful filling and deep-fried until golden brown. It is also known as gujjiya in north India. It is the perfect sweet treat to make for Ganesh Chaturthi!

Ingredients of Badam Karjikai
- For dough:
- 150 gm Chiroti rava
- 50 gm Refined flour
- 15 gm Ghee
- 80 ml Water
- A pinch of Salt
- For filling:
- 120 gm Badam mix
- 200 gm Grated coconut
- 5 gm Cashewnut
- 5 gm Ghee
How to Make Badam Karjikai

Add chiroti rava, refined flour, ghee, salt, and water to a mixing bowl to make a pliable dough. Knead well. Keep aside for 15 minutes.

Meanwhile, heat ghee in a pan, add cashew nut and fry till brown, add grated coconut, badam drink mix and mix well. Switch off the flame.

Take a lemon-sized dough and make a small ball out of it. Roll them into a small circle of 2 mm thickness. Place a spoon of stuffing on one side of the rolled dough.

Fold the pastry to form a semi-circle. Mark the edges with the fork to give them shapes and stick them together. Repeat the same procedure for all the remaining balls.

Heat oil in a kadai and deep fry the filled karjikai in moderately hot oil till light brown colour.
