Ingredients of Bedai-Kaddu Sabzi
- For bedai:
- 4 cups whole wheat flour
- to taste salt
- 1 tbsp oil
- 2 cups urad dal (soaked)
- 2 tbsp fennel seeds
- 1 tsp cumin seeds
- 1 tsp coriander seeds (crushed)
- to taste red chilli powder
- 1 tsp garam masala powder
- For kaddu sabzi:
- 1/2 kg pumpkin (cubed)
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/2 tsp methi dana
- 1 tbsp sugar
- to taste salt
- to taste red chilli powder
- 1 tbsp lemon juice
How to Make Bedai-Kaddu Sabzi

Knead dough for bedai by combining flour, salt and 1 tbsp oil.

Make filling for bedai by first grinding soaked urad dal. Then saute and cook the dal in oil with fennel seeds, cumin seeds, crushed coriander seeds. Add salt, red chilli powder and garam masala powder.

Make kaddu ki sabzi by cooking pumpkin pieces in ghee along with all the spices, sugar and salt. In the end, sprinkle lemon juice and serve with bedai.
