Ingredients of Biryani Masala
- 3 Big cinnamon sticks
- 15 Green Cardamom
- 2 Black Cardamom
- 15 Cloves
- 1 tbsp Black Pepper
- 2 Star Anise
- 1 Nutmeg
- 2 Mace
- 2 tbsp Coriander Seeds
- 1 tbsp Cumin Seeds
- 3 Bay Leaf
- 5-6 Dried Red Chillis
How to Make Biryani Masala

Heat a kadhai and roast dried red chillis and bay leaf until they slightly change colour and are fragrant. Take off the heat and keep aside.

In the same pan roast coriander and cumin seeds. Once they change colour slightly and leave a fragrance, take off the heat and keep aside.

Now in the same pan roast all remaining ingredients until they get fragrant. Take off the heat and keep aside.

In a blender, blend bay leaf and dried red chillis to fine powder. Once done add other ingredients and blend together.
5.
Make fine powder out of the ingredients, add turmeric for colour and store in an air tight container.
