Ingredients of Kaju Masala
- 1 cup Cashews
- 1 tbsp Butter
- 1 1/2 cup Tomatoes (chopped)
- 1 Bay Leaf
- 1/2 cup Water
- 18-20 Cashews
- 1 tsp Ginger-Garlic Paste
- 1-2 Green Chillies (slit)
- 1/2 tsp Garam Masala
- 1/2 tsp Kashmiri Red Chilli Powder
- 2-3 tbsp Cream
- 3/4 cup Water
- 2 tbsp Butter
- 1/2 tsp Sugar
- 1 tsp Kasuri Methi
- to taste Salt
How to Make Kaju Masala

Saute one cup of cashew in butter till they are golden. Keep aside.

Next, saute bay leaf and tomatoes in butter. Once the tomatoes are mushy, discard the bay leaf and grind the tomatoes to a puree. Keep aside.

Grind 18-20 cashews into fine powder. Keep aside. In the same pan, fry the ginger-garlic paste in butter till the aroma goes away.

Add the cashew powder and roast it till powder is golden. Add the tomato puree, chilli powder, water and green chillies. Let the curry cook for a while.

Add the fried cashew nuts and season with salt. Finish up the gravy by adding garam masala, cream and crushed kasuri methi. The kaju masala curry is ready!
