Ingredients of Maharashtrian Peeth Perun Bhaji
- 3 green capsicum, finely chopped
- 4 tablespoons besan (gram flour)
- 2 teaspoons mustard seeds
- 1 teaspoon haldi (turmeric powder)
- A pinch of hing
- 1 teaspoon red chilli powder
- 1 ½ teaspoon sugar
- Salt (as per taste levels)
- Oil/ghee
- Water (as per need)
- Coriander leaves (optional)
How to Make Maharashtrian Peeth Perun Bhaji

In a pan, add besan and dry roast it for 3-5. Stir continuously to avoid burning. When it becomes aromatic, turn off the burner and transfer it into a bowl.

In an iron kadhai, take some oil/ghee and let it heat. When it's hot, add mustard seeds and allow it to splutter. Now add hing and turmeric powder along with chopped capsicum. Mix well and cover the lid. Let it cook for 5 minutes but make sure to stir occasionally.

Now add spices- red chilli powder, salt and sugar in the capsicum mix. Mix well and cover with a lid for 2-3 minutes.

After you see that the vegetable has started releasing water, add roasted besan to it. Make sure not to add it all in one go but in small batches. You will see that the dish has started forming lumps but you need to keep stirring it continuously.

At this point, you can alter the water level of the final dish. Add a little extra water if you feel the dish has become too dry. Make sure to keep the gas burner flame on medium-low to avoid burning of besan. Give it a good mix and let it cook for 3-4 minutes so that all the ingredients are combined well.

Garnish with chopped coriander leaves and voila! Your peeth perun is ready to serve!
