Ingredients of Quiche Vegetarienne

  • For Vegetable Mix
  • 60 gram Red Onion, Sliced
  • 100 gram Yellow Capsicum
  • 100 gram Red Capsicum
  • 200 gram Sliced Zucchini
  • 20 gram Olive Oil
  • 5 gram Salt
  • 2 gram Pepper
  • 200 gram Eggs
  • 250 mililitres Cream
  • 100 gram Milk
  • For Crust:
  • 260 mililitres Water
  • 70 gram Butter
  • Pinch of Salt and mixed herbs
  • 120 gram Flour

How to Make Quiche Vegetarienne

For Vegetable Sauce

Slice the vegetables and set aside.

Heat 1 tablespoon olive oil and a tablespoon of the butter in a saucepan.

Add the sliced vegetables and sauté over medium-low heat for 10-15 mins. To make quiche sauce, in a mixing bowl, whisk the eggs, cream, milk, salt & pepper.

For Crust

1.
Cream the butter in a mixing bowl. Add flour, salt and mix at slow speed.

Add cold water and mix until the dough is formed. Refrigerate the dough for a couple of hours.

Roll out the dough on a light floured surface, cut out the discs according to the size of the mould.

For Assembly

1.
Take the prepared quiche ring and spread the grated cheddar at the bottom. Fill in ½ of the ring with the sautéed vegetables.
2.
And top up the quiche with the cream sauce. Bake at 180 degrees for 30-35 minutes.
