Ingredients of Shahi Bhindi
- 250 gms Bhindi
- 1 tsp Chaat Masala
- 1/4 tsp Salt
- 4-5 tbsp Oil
- 1/2 tsp Cumin Seeds
- A pinch of Asafoetida (hing)
- 1 large Onion (thinly sliced)
- 1 large Tomato (finely chopped)
- 1 inch Ginger
- 4-5 Cloves cups Garlic
- 1-2 Green Chillies (Crushed)
- 14-15 Cashews, Powdered
- 2 tbsp Besan
- 1/2 cup Curd
- 1/2 tsp Turmeric Powder
- 1/2 tsp Coriander Powder
- 1-1.5 cups Water
- 2 tbsp Fresh Cream
- 1/2 tsp Garam Masala
- 1/2 tsp Kasuri Methi
- to taste Salt
How to Make Shahi Bhindi

Slice off the crown and base of each okra and make a slit on one side. Sprinkle chaat masala and salt in the slit. Saute the bhindi in oil till it is cooked. Keep aside.

Grind the ginger, garlic and green chillies to make a paste.

Saute the cumin seeds, asafoetida, sliced onions. Cook it till the onions are light golden.

Add ginger-garlic-green chili paste and cook it till the raw aroma goes away.

Then add chopped tomatoes, ground cashew powder.

Mix in besan, turmeric powder and coriander powder. Few minutes later, pour the curd in and keep stiring it slowly, so the the curd doesn’t curdle.

Next add the water and seasonit with salt. Simmer the gravy and add the sauted okra. add garam masala, Kasur methi, stir it well and top it with cream.

Shahi bhindi is ready!
